Hi I found a niche that meats the Challenge criteria. A question I have is the CPC is $.69 but exact match search volume is 1900 searches a month. How does CPC relate to the product I'm selling? Does having a $.69 mean the product won't sell?

Hi mpossoff
Any positive cpc suggests that there is money being made through adwords on a niche topic - it's a positive indicator not a negative - higher numbers suggest a potentially more profitable niche.
I wouldn't focus too much on CPC if you are only just in the process of starting to test a new niche. Traffic numbers & competition are the important numbers I focus on - I might look at adwords traffic & cost numbers to make sure there is money being made on a topic but there are usually more profitable ways to monetise a niche than via adwords.
