I have a couple keyword phrases that return different SEOC figures everyday. Yesterday it was 20,000. Today it was over 100,000 earlier and now its 3,000. How can I know for certain what the real figures are? I don't want to go after a keyword w/ too much competition obviously.

Google is, of course, in the middle of a huge update (Google+ searches) so I wouldn't be surprised if that has something to do with it. If that's the case, then all we can do is wait and see how it plays out once Google is done changing the ways things work. The Market Samurai guys will, of course, be on top of any changes like that so it's good to check their blog from time to time.
I've also seen this happen before with certain keywords and all you can do it check it daily for a week or so and then I believe the numbers that come up the most often.
